week six: (speculoos) cookie butter cookie cake

yesterday was my buddy sangbo’s birthday party, so i baked him a massive cake ‘cause he’s a massive guy. i did this whole thing in an epic two-hour stint before leaving my house because i am an oversleeping, last-minute bastard busy girl with lots of places to go.

anyway, this is another made-up, winged recipe. the cake base is just a regular yellow cake mix from trader joe’s. follow the instructions, use 9” cake pans.

the frosting was a lot more fun. i used this recipe for peanut butter frosting—but replace the peanut butter with speculoos, and add a BIG dollop of cream cheese. fuck the proportions. use 25% of the confectioners sugar the recipe calls for (because the speculoos is already sweet), increase the cream cheese, and use half-&-half or heavy whipping cream instead of plain milk.

to ice the cake, chill the cake circles for a bit so they don’t crumble under the frosting, then frost the top of the first half with about 1/4 inch of frosting. sandwich the second half, then slather that bitch all over. be generous.

finally, because i love overkill, i got this big tub of trader joe’s bite-sized chocolate chip cookies and lined the entire surface and sides with them. this tasted amazing in a sad, guilty kind of way.

i’ve been baking too much! maybe next week i’ll try to cook something.

week five (bonus): speculoos mixed berry pie

this is a weird pie i made on a tuesday night out of boredom and leftovers. i completely made this one up, freestyle, so no recipe. instead i guess i’ll just… list everything that’s in this: plain crust, blueberries, blackberries, raspberries, strawberries, dark chocolate-covered acai/blueberries, speculoos, cocoa almond butter, cream cheese, sour cream, half & half, dash of cinnamon, crushed cashews, crushed peanuts.

i hope it tastes good!! i did this tonight instead of homework.

week five: raspberry white chocolate pie

last night my guy james came over and baked pie with me. he was a fabulous cooking assistant, until i found cream cheese on the ceiling, at which point he ceased his attempts at cooking.

as usual, this recipe was boring, so i improvised it up. i basically made the white chocolate filling—which was originally just white chocolate and sour cream—ten times more fattening/flavorful. it’s white chocolate, sour cream, cream cheese, half-and-half, and butter (of course). to top it all off i had james crush up some graham cracker crumbs and sprinkle them all over. good job james!

the store i usually buy chocolate from ran out of white chocolate bars, so i found this solid russel stover easter bunny and melted the shit out of it. that was an added fun factor.

this pie was gone in less than a day.

week four: dark chocolate peanut butter cupcakes

so today i took my first “sick day” or “mental health day” of the semester. i figured it was about time, i’ve been a second semester senior for like two months already, and why the shit am i still working so hard? so i passed out for twelve hours, watched the regular show, did some internet dicking, drew some comics, listened to this playlist, and baked cupcakes.

i love those times when i say “fuck the recipe!” and fuck the recipe. i bought a godiva dark chocolate with almond chunks instead of normal dark chocolate, partially for the added texture and flavor, but mostly because it was on sale for $2. i used cream cheese instead of sour cream, because 1) fuck sour cream and 2) i was out of sour cream. and i didn’t have any normal-sized cupcake tins, but i had these miniature multi-color veggie print ones from japan, which i think are far more kawaii.

just as i finished spooning the batter into the tins, i randomly decided to inject a peanut butter cream cheese filling (totally makeshift: half-finished thing of cream cheese frosting from the fridge and a glob of peanut butter) to make the cupcake bottom less boring. aesthetically, it may have been a bad idea, because when they finished baking it exploded through all of the dough. but flavor-wise, it ended up being a good call! and that’s all that matters. (this has to be the third or fourth time i’ve said that).

the overall effect of this cupcake is that the dark chocolate base is lightly bitter, virtually flavorless, and the whipped peanut butter mousse frosting is savory-sweet to compensate. it’s a really light, simple thing with complementing flavors and textures and shit. as a finishing touch, i saved a bit of the almond dark chocolate chunks for garnish, plopped ‘em in the middle of the frosting, and made some swanky-ass mini cupcakes.

if you don’t know what this is you have not yet lived. speculoos is an orgasmic belgian spread made out of gingerbread cookies. better than nutella. but you don’t spread speculoos on bread or crepes or anything like that. the bread in this picture is irrelevant. you eat this with a spoon.
if you’re ever in nyc, hunt down the wafels & dinges food truck—they sell artisan belgian waffles. they’re probably great and yummy and all, but i would suggest simply asking for a jar of speculoos. (3 for $20!)
